Slow Cooker Tuscan Chicken

This Slow Cooker Tuscan Chicken combines tender chicken with a creamy, garlicky sauce featuring sun-dried tomatoes and spinach. It’s an easy, flavorful meal that can be served over pasta, rice, or mashed potatoes!

Ingredients
4 boneless, skinless chicken breasts
1 tablespoon olive oil
3 cloves garlic (minced)
1/2 cup sun-dried tomatoes (packed in oil, drained and chopped)
1 cup heavy cream (or half-and-half for a lighter version)
1/2 cup chicken broth (low-sodium)
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper
1/2 teaspoon red pepper flakes (optional, for a bit of heat)
1/2 cup grated Parmesan cheese
2 cups fresh spinach (roughly chopped)
1 tablespoon chopped fresh parsley (for garnish)

Instructions
1. Prepare the Chicken:
Season the chicken breasts with salt and pepper on both sides.
2. Sear the Chicken (optional):
In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear for 2-3 minutes on each side until lightly browned. This step is optional but adds extra flavor to the dish. If you’re in a rush, you can skip this step and add the chicken directly to the slow cooker.
3. Add Ingredients to Slow Cooker:
In the base of the slow cooker, add the seared chicken breasts (or raw chicken if you skipped the searing step).
Pour in the heavy cream and chicken broth. Add the garlic, sun-dried tomatoes, basil, oregano, red pepper flakes (if using), and Parmesan cheese. Stir to combine everything around the chicken.
