Instructions:
1. Chop the potatoes and carrots.
2. For the roasting beef, season it with the ingredients and sauté it on a skillet over the stove.
3. Place the roasted beef in a casserole dish.
4. Add a cup of water to the casserole dish.
5. Add more Creole spices to taste and cover the dish with tin foil.
6. Bake at 350 degrees Fahrenheit for 2 and a half hours.
7. Remove the tin foil and add the carrots and potatoes to the casserole dish.
8. Place the casserole dish back in the oven and bake uncovered for an additional 30 minutes, or until the carrots and potatoes are tender.
