Ingredients: 

  • 8 eggs 
  • 1 bunch of fresh spinach, washed and chopped 
  • 1 tablespoon olive oil 
  • 1/4 cup chopped onion 
  • 1/4 cup chopped red bell pepper 
  • 3-4 cloves garlic, finely chopped 
  • Salt and pepper to taste 

Instructions: 

Preheat the Oven: 

Preheat your oven to 375°F (190°C) to ensure it’s at the right temperature before baking. 

Cook the Vegetables: 

Warm up the olive oil in a large frying pan over medium heat. Add the chopped onions and red bell peppers, and cook for about 5 minutes until softened and translucent. Add the garlic and cook for an additional minute until fragrant.
