Wrap the apples: Open the can of crescent roll dough and separate the rolls. Place one apple wedge at the wide end of each dough triangle and roll the dough around the apple. Pinch the edges to seal it tightly, making sure the apple is fully wrapped.
Place in baking dish: Arrange the wrapped apple dumplings in the prepared 9×13-inch baking dish.
Make the syrup: In a small saucepan, melt the butter over medium heat. Stir in the sugar, cinnamon, and vanilla extract, then mix until the sugar is dissolved. Remove from heat. Pour the lemon-lime soda into the butter-sugar mixture and stir well (it will bubble up a bit).
Pour syrup over the dumplings: Pour the syrup evenly over the dumplings in the baking dish.
Bake: Place the dish in the preheated oven and bake for 35-40 minutes, or until the crescent rolls are golden brown and the apples are tender.
