Pat the pork loin dry with paper towels. This helps the seasoning stick and promotes a good sear.
In a small bowl, mix together the olive oil, minced garlic, rosemary, thyme, salt, and pepper.
Rub the seasoning mixture all over the pork loin, ensuring it’s evenly coated.
Place the pork loin in a roasting pan, fat side up.
Pour the chicken broth into the bottom of the pan to keep the pork moist during roasting.
Roast in the preheated oven for about 1 to 1.5 hours, or until the internal temperature reaches 145°F (63°C).
Remove the pork from the oven and let it rest for at least 10 minutes before slicing. This allows the juices to redistribute, ensuring a juicy and tender roast.
