These Mashed Potato Cups are made by baking mashed potatoes in a muffin tin to create crispy, golden cups that can be filled with all your favorite toppings. They’re perfect as a side dish or appetizer!
Ingredients
4 large russet potatoes (peeled and cubed)
2 tablespoons unsalted butter
1/4 cup milk (or more, as needed)
1/2 teaspoon salt (or to taste)
1/4 teaspoon black pepper
1/2 cup shredded cheese (cheddar, mozzarella, or a mix)
1/4 cup sour cream (optional, for creaminess)
1/2 teaspoon garlic powder (optional)
1/4 cup cooked bacon bits (optional, for extra flavor)
Chopped chives or green onions (optional, for garnish)
Cooking spray (for greasing the muffin tin)
Instructions
1. Prepare the Mashed Potatoes:
Bring a large pot of salted water to a boil. Add the peeled and cubed potatoes and cook until fork-tender, about 15-20 minutes.
Drain the potatoes and return them to the pot.
Add the butter, milk, salt, pepper, and garlic powder (if using). Mash the potatoes until smooth and creamy. For extra creaminess, add sour cream.
2. Prepare the Muffin Tin:
Preheat your oven to 375°F (190°C).
Lightly grease a 12-cup muffin tin with cooking spray or use paper liners.
3. Make the Potato Cups:
Spoon the mashed potatoes into the muffin tin, filling each cup to the top.
Use a spoon or your fingers to gently press down in the center of each cup to create a small well (this helps the edges crisp up while baking).
