Ingredients:

  • 12 oz (340 g) spaghetti pasta
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can (14.5 oz or 400 g) crushed tomatoes
  • 1 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes (optional for heat)
  • Salt and black pepper, to taste
  • 1/4 cup (60 ml) red wine (optional but recommended for depth of flavor)
  • 1/4 cup (60 g) freshly grated Parmesan cheese (optional for garnish)
  • Fresh basil leaves, chopped (for garnish)
  • 1 tbsp sugar (optional to balance acidity of tomatoes)

Instructions:

Step 1: Cook the Spaghetti
Start by bringing a large pot of salted water to a boil. Add the spaghetti to the pot and cook according to the package directions, usually for about 8-10 minutes, until the pasta is al dente. Stir occasionally to prevent the pasta from sticking together. Once the pasta is cooked, drain the water, reserving 1/2 cup of the pasta water for later use. Set the spaghetti aside.

Step 2: Prepare the Marinara Sauce
While the spaghetti cooks, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes, or until the onion becomes soft and translucent. Add the minced garlic to the skillet and cook for another 30 seconds, stirring constantly to avoid burning the garlic.
